2020年10月20日 · Udon and Ramen noodles are very different. Ramen is a wheat alkaline noodle. Udon is just wheat (and water and salt) The fresh ones tastes the best IMHO. There are dry or shelf stable ramen noodles, but they are hard to find (unless you have a japanese supermarket near you), and a bit over priced online.

Nissin Raoh, Maruchan Gold, Myojo Chukazanmai, Prima Taste, Marutai and Shin Light are some air dried options with noodle textures I really like.

At the Tom Thumbs in Texas they have just the noodles on the shelves in the asian sections. They're straight like spaghetti noodles are. For the instant noodle packs, the Sapporo Ichiban ramen noodles seem the best to me for both flavor and texture but they'll run you $1 per package of ramen. You shouldn't throw the flavor packs away.

I second this. It is a much more traditional/orthodox Japanese ramen style with better quality noodles and soup than most of the cheaper stuff. Same for the Maruchan Seimen line. The Chuukazanmai line uses non-fried noodles (imo better) and also has good soup too. The Charumera shoyu has a bit of a showa era instant ramen taste.

2015年3月11日 · The best noodles are Sun brand, if you can find them. Honestly, you can make ramen in a couple of hours with a dashi packet, some chicken bones, garlic, ginger, scallions, sake, mirin, and soy sauce. It won't be as umami-rich, but it will still be delicious.

2021年12月5日 · ramen version of this. paldo also has one that was a favorite for a long time, especially the spicy smoky oil that goes on top (which i would still buy a bottle of if i could), but then i tried ottogi’s version and liked it even better. i like to swap out the ramen noodles for udon sometimes (with both versions)
