The 97 anime is the most faithful adaptation and covers the golden age arc. I wholeheartedly recommend watching it. It is also how I was introduced to Berserk. The movies are pretty alright and have some cool fight scenes (especially the later ones) but obviously lack some very important things because of the runtime. They also cover golden age.

I personally only read the manga but I know that the 2016/2017 anime skipped quite a few scenes and even one character super important to the story. So I suggest you start reading the manga from chapter 1. The 2016/2017 animes butchered Berserk anyway.
