Serving previously frozen oysters removes a lot of health risks. It's why a lot of restaurants buy IQF oysters. They have already been Pasteurized and pose very few of the risks that normal raw oysters do. They are not going to be as tasty or plump, obviously. Don't act like you are committing some huge safety risk by eating a frozen oyster.

Feb 25, 2014 · Unfortunately, in my experience, they taste awful, especially if you like raw oysters. They're rubbery, don't smell very pleasant, and taste worse. Health aside, go ahead and give them a try. One taste is all I needed--never going back. I'll stick with the raw ones.
