Checked at 11:30, 1:30, 4:00 AM, then when I went to check it at 6:00 AM thinking I would be able to wrap the smoker temp was somehow set to 130°. At 275F smoker temp you can bet on about an hour a pound. Sometimes a little more sometimes a little less. The time is helpful for planning but not for knowing when the brisket is done.
